Creamy Cajun Seafood Fettuccine with Shrimp and Spinach

• 12 oz fettuccine
• 1½ lb jumbo shrimp, peeled and deveined, tails on
• 2 tbsp olive oil
• 3 tbsp unsalted butter
• 5 garlic cloves, minced
• 2 cups fresh baby spinach
• 1½ cups heavy cream
• ¾ cup chicken or seafood broth
• 1 cup freshly grated Parmesan
• 1½ tbsp Cajun seasoning
• 1 tsp smoked paprika
• ½ tsp garlic powder
• ½ tsp black pepper
• ¼ to ½ tsp crushed red pepper flakes
• 2 tbsp finely chopped parsley
• Salt, to taste
• ½ cup reserved pasta water
• Extra Parmesan, for finishing

1. Cook the Fettuccine
Boil the pasta in salted water until al dente. Reserve ½ cup of pasta water before draining the fettuccine.
2. Season and Sear
Pat the shrimp dry and season with Cajun seasoning, smoked paprika, garlic powder, black pepper, and a little salt. Heat the olive oil over medium-high heat and sear for about 1½ to 2 minutes per side until deeply colored, then remove from the skillet.
3. Start the Cream Sauce
Lower the heat and melt in the butter, then cook the garlic for about 30 seconds. Pour in the broth and heavy cream, then stir in the Parmesan and red pepper flakes.
4. Wilt and Coat
Simmer gently until the sauce is smooth and slightly thickened, then fold in the spinach until wilted. Add the fettuccine and enough reserved pasta water to make the sauce glossy and cling to the noodles.
5. Return the Shrimp
Fold the shrimp through and over the pasta so it stays evenly distributed. Finish with extra Parmesan, chopped parsley, a touch of Cajun seasoning, and red pepper flakes.
